Refreshing Mote with Huesillos and South Multiflora Honey
200 grams cooked mote
400 grams bones
50 grams white sugar
50 grams brown sugar
50 grams honey from Multiflora Sur @reinamadre.cl
Skin of an orange (2 strips, without the white part)
A piece of cinnamon sticks
Soak the huesillos overnight in two liters of cold water, along with honey, orange zest, cloves and cinnamon.
Cook the mote in boiling water for 25 minutes once ready, drain and let cool. Reserve
Make a caramel with the sugar and brown sugar, once ready add part of the soaking water.
In a pot, cook the huesillos with all the soaking liquid, plus the caramel
Cook for 45 minutes, cool well.
Serve in glass glasses, with a portion of mote and huesillos and fill with juice.
